A comprehensive scientific production on a prebiotic tuber
A Brazilian researcher is an example of how the possibilities of research on a specific raw material are unlimited. Prof Dr Maria Lucia Masson has dedicated her efforts to investigating, among other raw materials, the yacon tuber (Smallanthus sonchifolius). She has been investigating the subject since 2002.
She has published several interesting, reliable and high impact articles on yacon features and yacon processing, besides advising M.Sc. and D.Sc. theses on the theme. Journals like Innovative Food Science and Emerging Technologies, Drying Technology, Journal of Food Engineering and LWT - Food Science and Technology are among the ones in which Dr Masson has published her results on yacon, which include products such as juice and dried chips.
